More Times on Our Hands, More Time to Try New Recipes

While the COVID-19 outbreak has impacted the world in many negative ways, it’s also given us the opportunity to try new things while being cooped up inside our homes. Some have taken up painting or scrapbooking. For me, it’s given me the opportunity to try new recipes I’ve been wanting to do but just haven’t gotten around to cooking. For Christmas this past year, I received Chrissy Teigen’s cookbook and I’ve most definitely been working on a few of her recipes. They’re easy enough to follow, delicious and will leave you feeling great about your cooking skills. Here are a few of my favorites!

Cauliflower Mash

I remember the days where cauliflower wasn’t even a part of my vocabulary. The smell and texture would throw me off. Now, I can’t get enough of it, especially in this cauliflower mash recipe. Mixed with garlic, ricotta and pepper, this is surprisingly a home run. Instead of whipping up mashed potatoes, try this and have it as a side dish with chicken or steak.

Artichoke, Spinach and Buffalo Chicken Dip

You will knock it out of the park with this healthy and tasty dip. You don’t have to have a party (which we can’t really have one given recent restrictions) to make this. Combine all the ingredients in an oven-safe dish and cook for 14-15 minutes. Enjoy with sea salt pita chips.

John Legend’s Favorite Breakfast Sandwich

In her cookbook Cravings, Chrissy Teigen includes the recipe for her husband’s favorite breakfast item and I can now say it is also a fave in our household. Keeping it simple but flavorful, the recipe calls for making sausage patties with ground pork seasoned with light brown sugar, garlic and honey. Cook the patties in a cast-iron skillet and assemble the patties into English muffins, topped with American cheese and sunny-side up eggs with Sriracha.
